South Indian Filter Kaapi

Coffee is something of a cultural icon in the southern states of India. While cafés have multiplied all over India, most restrict themselves to serving instant expresso. As a result, people living in North India have been largely deprived of South Indian Filter Coffee (kaapi).

When @rungta pointed me to this article, it brought back memories of my year-and-a-half long stay in South India (more specifically, Mysore and Bangalore) and my indulgence of this popular South Indian drink.

@priyasreeram, in her post, talks about what goes into the preparation of true South Indian kaapi — frothy, milky, aromatic and the (oh so lovely) bitter-sweet aftertaste.
